Last week I finally tried a recipe out of Meera Sodha’s cookbook, Made In India. I chose the Eggplant, and Cherry Tomato Curry as she mentions it was one of the first curries she made when she was young. I was always so discouraged by cooking Indian food as it seemed so out of my league. But I realized that it’s not scary at all; it is the perfect solution to giving vegetables an extremely tasty makeover!
I made it as a side dish with some rainbow trout and basmati rice. There was a rice disaster, (it turned out mushy) so we turned it into patties and fried them. My husband got fancy pants and plated our food with a little garnish. The best part of it all was that there were leftovers for lunch! By itself, the curry was filling, delicious, and healthy!
