Nomnomnom I love food. Food food food.
Today Kayleigh made us a delicious meal for our monthly Eats ‘N Tweets, (follow us on
Twitter and Facebook to keep up with our yummy staff meals, publicity updates, and
witty banter). She cooked from Rodale’s The Family cooks by Laurie David, (recipes
by Kirstin Uhrenholdt).
She made us the carrot, walnut, and apple salad along with the ravioli cupcakes, (with
the home made tomato sauce on page 210).
It was fantastic. The little ravioli cupcakes were jam packed with spinach, sauce,
ravioli, and cheesy goodness. The salad, though incredibly simple with just a squeeze
of fresh lemon as a dressing, was fresh, crunchy and worthy of seconds.
Half way through we asked for more and sent Kayleigh back to the kitchen.
It was an all around success!
