Hi my fellow foodies!

The other day I cooked Coconut-Lime Rice with Red Beans and Mango from our beloved Thug Kitchen and it was f*!cking delicious!
I had this idea that I would try out a vegan week. I love my meat but I’m aware of the meat industry’s evil ways and the effect eating it has on the environment. So I have been trying to do a few meatless meals a week with the intention of trying out a full meatless week and even more intense: a full vegan week.
Thug Kitchen has some pretty good vegan recipes and they do try to make things tasty and approachable and for the most part they are successful. It is the first cookbook that I’ve sat down and read the introduction of as usually it’s about some cheesy culinary journey that I don’t give a sh*t about and I think just delays me getting to the juicy recipes within. But the writing is full of swear words and frank statements and it had me laughing out loud.
Anyway, I have tried about four recipes and this one was the best. I used dried red beans and had a hell of a time trying to get them to hydrate. There was lots of actual swearing in my kitchen doing this. Oh, and I actually gave up on them at one point and cooked some chicken (from a Mennonite farm, calm the f*ck down) in place of the red beans. But then I added them at the last minute because I’m a hero.
The end result was pretty awesome and incredibly filling, which is something I thought I’d never say about vegan food!
