This is my second blog post about a cookbook that I’ve already blogged about. Rather than another Randy Shore recipe, I’ve made one more meal from Meera Sodha’s Made in India. I can’t help but share these mouth-watering moments with you guys. I’ve got the need – the need for FEED! I need to let the bloggerverse to know about all things yummy.
This time I made the Oven-Roasted Chicken Tikka with mint yogurt chutney. My husband had the idea of making a naan wrap so we got some apples, onions, hot and sweet mango chutney, and cucumbers to add to our meal. The best part of this incredibly tasty recipe is that it bursts with flavour and it is so healthy! There is only a thin layer of vegetable oil needed on the baking sheet for the chicken and everything else is just yogurt, spice, and herbs. So delish! A tip: after cooking the chicken for 20 mins, turn on the broiler for 5 extra mins to get the edges nice and dark and extra flavourful.
